One of my first murals was on a bare mud pot and Krishna was my first one! As if sleepless nights were not enough with a 5 month old daughter at home, I took 9 months to complete this mural which still adores our house in India. Sculpting was my soul food!
Although I practice only meditation now, I cooked this delicacy in the name of Krishna for all today. Krishna is my line of Gurus for meditation though, but we do not have to make any external ritual for Gurus. Devotion and love is only internal ritual.
Pleasures in life are much interconnected to our culture and especially food! There is no way Krishna won’t come to eat Kesar Paneer Payasam! If you haven’t heard “Achutam Keshavam Krishna Damodaram” (a hindi bhajan), you have to listen to understand how he will come to eat your delicacy . He is called “Maakhan chor” (butter thief) not in vain. There are people in my house who love little too much desserts made with milk! Even if you do not know how to make a rich dessert with milk, here is a very simple and a rich one!
Recipe: Kesar Paneer Payasam
Yield: 5 portions, Serving size: 1/2 cup
- 200gm Paneer ( regular milk)
- 3 cups and 2 Tbsp Milk – (Toned or Almond)
- 1/4cup Sugar
- 1tsp Cardamom powder
- Few strands of Kesar
- 2Tbsp Sliced Almonds
Method: Soak Kesar in 2 Tbsp of milk and keep it aside. Put milk to boil till it becomes half the quantity on a slow flame. Soak paneer in warm water for 5 minutes and remove and crumble it finely in a bowl. Add crumbled paneer to the milk after it becomes half the quantity. Add kesar and cardamom powder to the paneer kheer. Let it cool in the refrigerator for 1-2 hrs and serve with sliced almonds as garnishing.
People who are lactose intolerant or are on low potassium and low Phosphorus diet, can take alternate food-map to make this. Since regular milk is high in potassium and phosphorus, substitute milk with low phosphorus and low potassium rice milk or almond milk. Taste and texture can vary, but this change will meet the health goal especially for people on dialysis.
